How yellow tea is made
Yellow tea is produced like green tea, except that the leaves are wrapped in a special rough paper before final drying. These still-moist, piled-up leaves generate heat which yellows them and brings out their characteristic taste. The aroma loses its grassy aspect, gaining warmth and depth.
Yellowing is a sensitive process. The leaves are stirred often to maintain constant quality and prevent decay from excessive heating.
Yellow tea is rare and—if processed according to tradition—extremely hard to find.
