Jin Zi Sun
Descending from the historic Gu Zhu Zi Sun, once produced as a compressed imperial tribute tea and praised in Lu Yu's immortal Classic of Tea, Jin Zi Sun has gradually slipped from the spotlight, overshadowed by more famous green teas. Unfairly so, for few of its Zhejiang siblings can match its distinctive—and utterly captivating—character.
The session opens with a gentle nutty note that initially recalls its celebrated cousin, Long Jing. Soon, however, a more pronounced starchy sweetness and subtle vegetal depth emerge, evoking steamed artichoke hearts. As the infusions progress, the tea reveals its defining character: an irresistible, umami-rich savoriness that greets the nose like an ocean breeze and the palate like a delicate seaweed broth. Throughout the session, the bright freshness of celery weaves through the profile, lending the tea a vibrant, crisp lift that balances its savory depth.

For best results in gongfu cha, brew in a tall glass and fill with water before adding the leaves. Too high water temperature would burn the leaves, resulting in bitter taste.
